it's june in january

No, summer hasn't started early, very early, this year. It is just regarding my current eating habits that seasons seem to have changed.

Okay, not completely, of course - I still have my love of all chocolate things, especially Kinder. But I seem to prefer a lighter lunch these days. Today, for example, I have made myself a delicious salad with different toppings, a homemade honey-and-mustard dressing and some baked cheese. It was so yummy and it made me feel really good because it was so healthy, that I would like to share it.

It is pretty easy so everyone should be able to mix it, you just need some special ingredients. Here's what:

mixed salad with wildflowers (any kind of green salad you like is actually fine)

1 or 2 half peaches, either fresh or I prefer the ones from the tin

baking cheese

for the topping:

sunflower seeds

pinecorn

dry roasted onions

salt and pepper

Of course, you can mix in any seeds you like or dried fruit such as cranberries or raisins if you like a fruity, sweet salad.

for the dressing:

some honey

some mustard

Firstly, mix all your toppings together so you will have some of each everywhere on your salad later on. Do that best in a box that can be closed, because this way you only have to shake the box for your ingredients to mix pretty well. Then, take the salad from the box and on a plate. Easily done.

Take one or two half peaches and cut each into four slices, which you put on your salad. Then, put the baking cheese in a pan and wait until is gets crunchy and kind of golden on the outside and creamyon the inside.

In the meantime, you can mix your dressing. It is really easy like the rest of the meal. Just mix as much honey and mustard as you like together, stir it and put in some salt and pepper. Remember, there's no right or wrong - do it just the way you like the taste.

Now you put your dressing on the salad and then the topping. Never do it the other way round because then, your crunchy toppings will just get soft.

Now, your cheese should be ready so you cut it in half and put it on the salad. If the cheese is really soft, it's perfect.

Sometimes, the baking cheese box contains a dip which is somehow fruity. You can use this as a topping for the cheese or (like me) put it on the sides. This way, it's going to mix with the salad and gives the whole dish an even more fruity taste.

You can always vary with the ingredients, but these are my favourites. Sometimes, I also like the pinecorn roasted so I put them on the pan with the cheese. It gives them a more intense taste.

Or you could use mango instead of the peaches.

Just remember, it's good as long as it is to your taste. So don't bother with exact quantities.

You see, it is the most easy thing to do and it looks so tasty and delicious! I just love all the different colours.
